CORE 122: Food for Thought - Course Description

Building on examples of noble lives from the first semester (CORE 112), this course will explore what it means to apply those lessons in the American context. In particular, students will experience what it means to be an active and responsible citizen in the modern world. CORE 122's defining questions: What are the rights and responsibilities of American citizenship? How have the definition and cultural meaning of citizenship changed over time? How have the economic, technological and globalizing transitions of the modern era challenged the practice of citizenship? How can we sustain and remain active American citizens in a rapidly changing and expanding society?

Sub-Unit Topic: Food for Thought
Where did the food from your most recent meal come from? What are you really eating? What are the politics of agriculture? What influences our eating choices and how do our eating customs differ from those in other parts of the world? Are there enough resources and food to feed everyone on earth? In this unit we will attempt to answer these questions by investigating issues in modern agriculture, personal health, nutrition, and hunger. During our journey we will use a variety of texts including Michael Pollan's The Omnivore's Dilemma: A Natural History of Four Meals, the 2008 Farm Bill, recent and historical news stories and service projects to examine the connection between food and modern citizenship
